SUMMARY
The Sous Chef plays a key leadership role in supporting all aspects of the Team’s culinary program, helping execute all meals that fuel athletes, coaches and staff. This position works closely with the Executive Chef to oversee daily kitchen operations, ensuring excellence in food quality, service and sanitation. The Sous Chef provides guidance and direction to kitchen staff, assists with menu execution and upholds operational standards. In the absence of the Executive Chef, the Sous Chef assumes full responsibility for managing the kitchen, maintaining seamless service and ensuring the culinary team operates at the highest level.

ESSENTIAL DUTIES AND RESPONSIBILITIES include the following. Other duties may be assigned.
- Assists the Executive Chef in recipe development and menu planning
- Weekly meetings going through any products that need to be utilized first and always coming prepared with new recipe ideas/techniques
- Leads daily production and ensures presentation of all items are to the desires of the Executive Chef
- Creates a daily prep list and assigns each item to kitchen staff members
- Goes through each sauce, dressing and house prepared item each day and adds to the prep list if more needs to be made
- Properly follows any provided recipes and collaborates with the entire kitchen to create new recipes
- Utilization of a recipe software (notemeal) to make each recipe macro specific for our ordering system
- Assists in maintaining an organized and clean walk-in, freezer and dry storage
- Continually checks quality of all perishable products and utilizes any items that might be spoiling soon in a creative way so that there is minimal food waste
- Ensuring that all Lead Chefs are opening and closing all stations properly: refilling the spice racks, refilling the oil containers, cleaning all equipment after each service
- Knowledge and understanding of food safety and sanitation guidelines including temperature requirements and HACCP
- Attends and occasionally leads in-service and safety meetings
- Ensure timely meal execution for scheduled team events, practices and travel
- ServSafe Certification required
- 3+ years of experience as a Sous Chef or in a leadership culinary role, preferably in high-volume or performance-focused environments
- A.S. in culinary arts or equivalent experience
- Previous progressive culinary/kitchen management experience as either a sous chef or head chef
- High volume, complex foodservice operations experience
- Comprehensive knowledge of food and catering trends with a focus on quality, production, sanitation, nutrition and presentation
- Washington Food Handlers Permit – required by state
- Ability to work nights, weekends and holidays as needed
- Discreet, ethical and committed to maintaining a high degree of confidentiality
- The ability to work under pressure, prioritizing tasks and juggling many jobs simultaneously

COMPENSATION AND BENEFITS
- The salary range for this position is: $78,000 – $83,000. The salary range applies to the current posting. The posted salary range may vary based on key factors including, but not limited to, education, job-related knowledge, experience and skill set.
